Bacon Chocolate Chip Pancakes!


This idea kind of stemmed from two things, one my craving for delicious pancakes and my family's love of all things bacon.  With as popular as the bacon/chocolate combo is these days I felt I needed to finally hitch myself to that particular bandwagon.  Before you totally reject this recipe, you know cause seriously bacon and chocolate is weird in pancakes, I must tell you I slaved over this one.  I sort of wrote it myself...well I used an old hand written pancake recipe scribbled into one of my notepads and tweaked it until it tasted just right...and now that I have guilted you all into reading further...I think you should all try it too!

Now, I doubt it is truly a nutritious breakfast, but it was a special treat and we all enjoyed it very much.  The trick is, sigh...don't judge me, the trick is to put actual bacon grease in the pancakes in order to provide more bacon-y flavor.  You should all try it at least once.  They are delicious and lots of fun to make with the whole family!





Whisk together your dry ingredients.


Add in the wet ingredients and whisk until there are only small lumps left.


Like this!


Add in bacon pieces and mini chocolate chips.


Mix well...


Cook on a preheated skillet until small bubbles appear.


Flip and cook until lightly browned on each side and cooked through.


Top with maple or chocolate syrup and serve!


Bacon Chocolate Chip Pancakes
Makes about 12-18 full size pancakes depending on size

1 1/2 cups all-purpose flour
3 1/2 tsp. baking powder
1 tsp. salt
1 Tbsp. sugar
1 1/4 cup milk
1 egg
3 Tbsp. melted butter
1 Tbsp. vanilla
1/4 cup bacon grease
1/2 cup mini chocolate chips
4 pieces bacon, chopped

Start by cooking up about 1/2 a package of bacon.

Whisk together the flour, baking powder, salt and sugar in a mixing bowl.  Whisk in the milk, egg, melted butter, vanilla and bacon grease.  The mixture will have some small lumps but will be mostly smooth when done.  Stir in the mini chocolate chips and bacon pieces.

Pour 1/2 cup or so of the batter into a preheated skillet and cook until bubbles begin to appear. Flip over and allow to cook until both sides are lightly browned and the pancake is cooked through.  Serve with maple or chocolate syrup, fresh fruit and extra bacon along side!

The other day I had a craving for something oober chocolatey and began my search by going to a few of my favorite food blogs and searching for brownie recipes.  There were tons of yummy looking ones, but the all time best came from the  Big Red Kitchen .  I love this blog as there are so many yummy, quick recipes including her recipe for the following Knock You Naked brownies. S'mores with a Twist!

Now that it is finally summer and the weather is beautiful here in Southwest Washington, that means it is time for camping and cookouts to begin.  The most important food item at these events of course, being s'mores.  Who needs the hot dogs, burgers and steaks...I'll take s'mores please!  : D For our family camping trip I decided to mix it up a bit and feature some new candy bars besides the Hershey's Milk Chocolate bars.  I hit the candy aisle at the grocery store and looked for every flat-ish candy bar available.  I ended up with a Hershey's Symphony bar, a Hershey's Cookies n' Cream bar, a Mr. Goodbar (my family's personal fav) and a Reese's Peanut Butter bar.  Time for the fun to begin!   We all had a blast trying the different bars and although they were all delicious, my mother-in-law and sister-in-law liked the Mr. Goodbar best, where as I LOVED the Reese's Peanut Butter bar.  I ate way too many after white water rafting...but I figure...

Graduation cupcakes!

A few weeks ago now, our family had two graduations on the same day...my little one graduated from preschool (I feel so OLD) and my brother-in-law graduated from high school.  In honor of such wonderful occasions I decided to make some cupcakes.   For my daughter's, I made mini cupcakes with blue and pink graduation hats since those are the colors she and her classmates wore from graduation.  Then for our little BBQ at home, I made big cupcakes with green hats (that was my brother-in-law's school color) and pink ones for the graduation girl.   Now, I must confess, that with all the things going on that week and the fact that I had to bake goodies for the end of the quarter parties at the college I work at, I cheated on these cupcakes.  Yup, that's right, I used box mixes.  See, I do it sometimes...not often but every once in a while you just don't have the time or energy to bake from scratch.  I do it, you guys do it...we all do.  So do y...
