Bacon Cheeseburger and Cheesy Jalapeno Sliders


I just love sliders, don't you?  They are all cute and tiny and if done right you can pack a pretty good wallop of flavor into those teeny tiny 2 bite burgers.  A few weeks ago, we had some beautiful weather in which I decided to make these little gems.  They came to me early in the morning as I was getting up, or maybe they were the remnants of a dream, not sure that it really matters.  All I know is that morning when I woke up and saw the gorgeous sunshine, I decided I had to have sliders with jalapenos and shredded cheese mixed in.  My sister-in-law of course mightily agreed (she's got a thing for everything peppers...) since this sounded like the perfect summer meal on such a perfect summer day.


Assemble all of your ingredients and throw them all into a large bowl and mix them together.  Let sit a about half an hour to let the flavors blend.


Grab your slider press if you have one, and place down some foil or parchment paper for easy clean up later.


Place a golf ball size amount of meat into each compartment of the press.


Gently flatten out the meat to make it easier to get uniform squares.  If you don't sometimes you will end up with thick spots or corners missing.  


Press down firmly on the top of the press to ensure that the sliders are compact and hold together nicely on the grill. 


Carefully remove the top, being sure to leave the patties on the foil. 


Remove the base of the press and there you have them! Sliders!


Grill on medium-high heat for 4-5 minutes, or just until about done.  Be sure to still leave them juicy and moist...you don't want them to overcook. 
 (Yup, those are some giant zucchini slices...our garden apparently only grows monster ones...)


Top with your favorite toppings and serve on little buns.

Bacon Cheeseburger Sliders
makes about 12-16 sliders

1 lb. ground beef
1/2 cup bacon bits
1/2 cup shredded cheese
1 Tbsp. Montreal steak seasoning

Mix all of the ingredients together and let sit for about half an hour so that all the flavors can marinade and the bacon can soften up a bit.  Grill for 4-5 minutes or so, depending on the thickness of the sliders, until they are cooked just about through but still juicy and moist.  Top with a good slice of sharp cheddar cheese and whatever condiments and veggies float your boat!


Cheesy Jalapeno Sliders
makes about 12-16 sliders

1 lb. ground beef
2 Tbsp. dried jalapenos, or one fresh jalapeno
1/2 cup shredded cheese
1 Tbsp. Montreal steak seasoning

Mix all of the ingredients together and let sit for about half and hour to let all the flavors mix and the jalapenos soften.  Grill for 4-5 minutes, same as the bacon cheeseburger sliders, just until mostly done so that they are still moist and juicy.  Top with sliced pepperjack cheese for an extra kick and whatever else you desire!

These were so good that all 7 of us home for dinner that night ate almost 50 of them (I used 4 lbs. cause we had such a big group).  I recommend having some sort of slider press for making that many though...like the one I picked up from Williams Sonoma last year near the end of summer on clearance.  They might have some more clearanced out this year...you should check them out!

S'mores with a Twist!

Now that it is finally summer and the weather is beautiful here in Southwest Washington, that means it is time for camping and cookouts to begin.  The most important food item at these events of course, being s'mores.  Who needs the hot dogs, burgers and steaks...I'll take s'mores please!  : D For our family camping trip I decided to mix it up a bit and feature some new candy bars besides the Hershey's Milk Chocolate bars.  I hit the candy aisle at the grocery store and looked for every flat-ish candy bar available.  I ended up with a Hershey's Symphony bar, a Hershey's Cookies n' Cream bar, a Mr. Goodbar (my family's personal fav) and a Reese's Peanut Butter bar.  Time for the fun to begin!   We all had a blast trying the different bars and although they were all delicious, my mother-in-law and sister-in-law liked the Mr. Goodbar best, where as I LOVED the Reese's Peanut Butter bar.  I ate way too many after white water rafting...but I figure

Graduation cupcakes!

A few weeks ago now, our family had two graduations on the same day...my little one graduated from preschool (I feel so OLD) and my brother-in-law graduated from high school.  In honor of such wonderful occasions I decided to make some cupcakes.   For my daughter's, I made mini cupcakes with blue and pink graduation hats since those are the colors she and her classmates wore from graduation.  Then for our little BBQ at home, I made big cupcakes with green hats (that was my brother-in-law's school color) and pink ones for the graduation girl.   Now, I must confess, that with all the things going on that week and the fact that I had to bake goodies for the end of the quarter parties at the college I work at, I cheated on these cupcakes.  Yup, that's right, I used box mixes.  See, I do it sometimes...not often but every once in a while you just don't have the time or energy to bake from scratch.  I do it, you guys do it...we all do.  So do you forgive me?!  : D

Homemade Cinnamon Rolls...from scratch!

Tuesdays are our lazy days around our house.  I don't work until the afternoon and my daughter doesn't have school, so it is kind of the day that we sleep in, have a yummy breakfast and get a few things done around the house.  This Tuesday, I decided to make it extra special and make homemade cinnamon rolls...from scratch!  I don't think there is any better breakfast than a delicious hot from the oven cinnamon roll that you made with your very own hands.  Plus, I had some leftover cream cheese frosting that tasted just like Cinnabon's frosting...so yeah, basically best breakfast EVER! lol Our ingredients... Add your milk, oil, and sugar to a saucepan.  Heat over medium heat until just below boiling. Sprinkle on the yeast and allow to sit for a minute. Stir in the 4 cups of flour. Allow to sit covered with a kitchen towel for an hour in a warm place.  then stir in the last 1/2 cup flour, baking powder, baking soda and salt. Place in a large bowl and r
